Medjool Date Peanut Butter Cookies
These soft, whole food-based cookies combine nutrient-rich dates and protein-dense peanut butter for a naturally sweet, satisfying treat. With a hint of vanilla and a sprinkle of sea salt, they’re packed with flavor while keeping things nutritious and healthy. Perfect for a guilt-free indulgence!
Ingredients:
- 1 cup Medjool dates, pitted
- 1 cup peanut butter (or other nut butter)
- 1 tbsp ground flax seeds
- 3 tbsp water
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- Coarse sea salt and almonds (optional)
Instructions:
- Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
- Process dates in a food processor until combined (it can be a bit crumbly).
- Add peanut butter, flax, water, vanilla, and baking soda. Blend until a sticky batter forms.
- Scoop heaping tablespoons of dough, roll into balls, and place on the baking sheet. Flatten gently into cookie shapes using a fork.
- Sprinkle sea salt on top (optional) and bake for 13-15 minutes. Cool completely before serving.
